Where to find the problem 5 – Harmful effects of certain chemicals

The three most commonly used herbicides are glyphosate, atrazine and 2,4-dichlorophenoxyacetic acid. They have toxicological and hormonal effects on animals and humans via feed and food plants.

Insecticides and fungicidal pesticides,

which act by inhibiting chitin synthesis, adversely affecting human connective tissue. Chitin synthesis inhibitors inhibit the coenzyme uridine diphosphate-N-acetylglucosamine (UDP-GlcNAc). As a result, they inhibit the chitin synthesis of insects and fungi as well as the formation of glycosaminoglycans from the extracellular matrix of human connective tissue (hyaluronic acid, chondroitin sulphate and N-acetylglucosamine polymer from chitinase-like proteins).

The GM soya herbicide glyphosate poses a risk to the stomach and intestinal mucosa

It affects intestinal dysbiosis and plays a role in liver and kidney damage. It has a herbicidal hormone-modulating effect by blocking the action of the enzyme aromatase. It prevents the conversion of testosterone into estrogen in the female body. Excess testosterone leads to the development of polycystic ovaries (PCO). An indirect problem with GM soya is that the glyphosate content of pork and poultry fed on industrial feed causes similar problems to the direct effects of GM soya.

Atrazine also affects the enzyme aromatase, which converts testosterone into oestrogen

Atrazine inhibits the activity of the aromatase enzyme. It lowers the testosterone level in men and increases the oestrogen level in women. It causes problems in both sexes: testosterone deficiency in men and high oestrogen levels in women lead to endometriosis.

Effects of non-fermented foods and food additives

In the modern diet, traditional fermented foods have disappeared and have been replaced by food additives.
Wholemeal flours can be harmful: Wheat germ agglutinin protein (glycoprotein) is a pro-inflammatory substance. Bran is not healthy in many respects. It contains a lot of lignin and little pectin and hemicellulose. It is hardly fermentable for intestinal bacteria (inferior dietary fibre).
There is a potential risk from various fungal toxins or fungicide residues in the bran. Most of the phytates that are ingested with the bran are plant lectins that can cause severe intestinal inflammation.

Corn syrup with a high fructose content (monosaccharide) is used everywhere instead of beet sugar (disaccharide). Thirty years ago, the daily intake of fructose was 0-10 grams. Today it can be up to 250-300 grams. High fructose corn syrup damages the metabolism and is one of the main causes of metabolic syndrome.

The food industry uses many additives to make food tastier, but certainly not healthier. Additives play an important role in the development of high blood pressure.

Omega-3 and omega-6 fatty acids and their ratio play an important role in maintaining homeostasis and preventing inflammatory processes. The diet should contain the right ratio of omega-3 and omega-6 fatty acids for the body to function optimally. Experience has shown that a healthy ratio of omega-3 to omega-6 fatty acids between 1:1 and 1:3 is not unusual, while a ratio of 1:30 can cause serious problems.
